Happy Cinco de Mayo! Today we’re moving into our new apartment so we will be celebrating later on. I love Mexican and Tex-Mex food and drinks so I might be celebrating all weekend long! This recipe roundup contains mouth-watering enchiladas, spiced-up cocktails, and other tasty entrees from myself and fellow food bloggers.
Since I had so much fun collaborating with other bloggers and received positive feedback, I decided to participate in another recipe roundup! Note that not all of these recipes are dairy-free and egg-free, but I provided some tips to make them allergy-friendly!

If you follow this blog or my social media, you know how obsessed I am with sweet potatoes. This recipe might just become a regular around here. To make dairy-free, simply omit or use your favorite brand of dairy-free cheese.

My husband loves ordering steak fajitas when we go out for dinner. This easy recipe is sure to be a hit with him! I also love the use of dairy-free yogurt as a replacement for sour cream. I’ve been doing that a lot lately and really enjoy it!
Baked Huevos Rancheros: Gluten, Dairy and Soya Free
I used to enjoy huevos rancheros before my egg allergy kicked into high gear and I became lactose intolerant. This baked version of a classic dish is gluten, dairy, and soy free! To make egg-free as well, I would recommend replacing the eggs with tofu scramble! It will be different, but I imagine just as tasty!
Sheet Pan Chilli-Lime Chicken Fajitas with Corn & Cilantro Salsa
This quick and easy chicken fajita recipe sounds right up my alley! While I haven’t experimented much with sheet pan recipes, I love the idea since there’s less cleanup afterward. Plus you can make larger servings for leftovers or parties!
Healthy Blood Orange Paloma
I love Paloma cocktails, but I’ve only ever had them traditionally made. This blood orange take on the classic is just the drink to serve at your Cinco de Mayo party!
What can I say, my husband and I love fajitas! Once we’re all settled in our new apartment we plan on buying a grill, and I think this recipe is first in line! Tequila + fajitas, what more could you ask for?
Easy Corn Relish
This corn relish is the perfect crisp condiment to jazz up your favorite dishes–tacos, fajitas, enchiladas! It also works great as a salsa replacement for an appetizer or snack. I can’t wait to put this in my Taco Tuesday rotation!
I think tostadas are one of the most underrated Mexican dishes! With so many toppings to include, the variations are endless.
