Every single time I make chili, I crave cornbread. A few years ago I ran out of cornmeal and just never remember to pick it up when I’m grocery shopping. This time, I specifically put it on my list so I could make this ridiculously easy cornbread recipe plus have for homemade pizza! What else do you use cornmeal for?
Dairy-Free & Egg-Free Cornbread
1 cup all-purpose flour
1 cup cornmeal
4 tablespoons sugar
¼ teaspoon salt
1 cup soy milk
1/3 cup vegetable oil
1 tablespoon baking powder
1. Preheat oven to 425° F. Grease 8×8 baking dish.
2. Mix together everything except baking powder. Then add baking powder and mix well.
3. Pour into greased baking dish and bake for 25 minutes or until golden.
Serve and enjoy with dairy-free butter alongside a bowl of chili!
