Crunchy Asian Salad with Peanut Dressing
For the Salad:
1 bag coleslaw mix
1 packages of ramen noodles, crumbled
1/2 cup snow peas, cut in half
1 avocado, peeled, pitted and diced
1/4 cup green onions, thinly sliced
For the Dressing:
2 tablespoons creamy peanut butter
1 tablespoon rice vinegar
1 tablespoon fresh lime juice
1 1/2 tablespoons vegetable oil
1/2 tablespoon soy sauce
1 tablespoons honey
1 tablespoon sugar
1 garlic clove, roughly chopped
1/2 teaspoon salt
Optional toppings: crushed red pepper flakes, Sriracha
1. Add all ingredients for salad into a large bowl and mix together.
2. Using a small bowl, whisk together dressing ingredients. Stir until combined.
3. Pour dressing over salad and mix well.
4. Serve immediately and enjoy! If you have leftovers, cover and refrigerate for up to 3 days.
