Loaded Baked Taquitos


As you’ve probably noticed, we love Taco Tuesday over here!! Sometimes I want to mix our Tuesday’s up with burritos, taco salads, or these crispy taquitos! 


Loaded Baked Taquitos

Yields: approx. 20

1 pound lean ground beef
1 small onion, diced
3 cloves garlic, minced
Homemade taco seasoning
1 small avocado, diced
1 Roma tomato, diced
Bag of 6-inch corn or flour tortillas


1. In a large skillet over medium heat, brown the ground beef. Using a wooden spoon break apart the meat as it cooks. Once just cooked, add the onion and garlic.

2. Mix in the taco seasoning. If needed, loosen with 1/2 cup water. Let cook for about 5 more minutes. Pour into a large bowl and let slightly cool, then mix in the avocado and tomato.

3. Preheat oven to 400F. Place about a tablespoon of the mixture on each tortilla. Roll up and place seam side down on a lined baking sheet.

4. Bake for 12 minutes or until golden brown.

Serve and enjoy with salsa or guacamole!

  1. As soon as I came to your blog and saw the first pic in this post, my eyes opened wide and I was like, “OOooooooo what is this deliciousness????!” I will DEFINITELY be trying these taquitos!! (and I bet both my family and myself will thank you for it).

  2. I love taquitos, they’re such an easy finger food to eat. Which of course means I eat way too many in one sitting 🙂 I really like the sound of this loaded version, and will definitely have to try them. Thanks for sharing
