Seasoned baby potatoes are a great side to many dishes! We recently enjoyed them with stuffed peppers, and they were a beautiful mix. The best part–they take less than 30 minutes to make!
Seasoned Fingerling Potatoes
Seasoned Fingerling Potatoes are a great side dishes to many meals. Simple and ready in 30 minutes! Boil potatoes, saute, then sprinkle with herbs.
Ingredients
- 1 pound fingerling potatoes
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon dried rosemary
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ¼ teaspoon crushed red pepper flakes
Instructions
- Wash the baby potatoes clean, then place in a saucepan. Cover potatoes with water and stir in salt.
- Bring to a boil. Once boiling, reduce the heat to a simmer and let cook. This takes about 10-20 minutes. Check around 15 minutes. Potatoes are done when utensils can slide in easily.
- Once cooked, drain the potatoes. Let slightly cool, to touch. Then cut into halves or quarters.
- Heat a skillet with olive oil then transfer potatoes to skillet. Sprinkle on herbs and gently mix until well coated. Serve and enjoy!
