Spinach Tofu with Turmeric Rice
Spinach Tofu with Turmeric Rice is a vibrant bowl that's filling, healthy, and easy to make. Crispy tofu over rice pairs beautifully with lemon wilted spinach.

Ingredients
- 1 cup long-grain rice
- 2 cups vegetable broth
- 3 tablespoon olive oil
- 1 (14-ounce) package extra-firm tofu drained, pressed, and cubed
- 6 cups spinach
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon fennel seed
- 1 tablespoon lemon juice
Instructions
- Combie rice, broth, and turmeric in the rice cooker and let cook on the white rice setting.
- Meanwhile, heat olive oil in a medium pan over medium-high heat. Add tofu in a single layer. Season with spices. Cook tofu until lightly browned. Once cooked, transfer to a paper towel.
- Add spinach one cup at a time to the same pan. Let cook until wilted.
- To serve, fluff rice and place in a bowl then top with spinach and tofu. Squeeze fresh lemon juice on top and enjoy.
